Our newest blend, the Panza, or Sancho Panza, is named after a character from our roaster's favorite novel, Don Quixote. When we had this blend in mind we just wanted it to be fun and adventurous, a bright and playful experience! Our first 3-coffee blend, we wanted to give it a chocolate-forward and sweet base, choosing a Central American coffee that fits that profile. For the other two coffees, we are choosing coffees and developing them for more juicy and fruit-forward flavor qualities, making the Panza a dynamic espresso and an engaging drip option for both casual coffee drinkers and baristas alike!
