Finca Alejandrina is located in Huehuetenango, Guatemala. Specifically San Martin Cuchumatan. This is our very first coffee we have purchased from Onyx Coffee Importing out of Bellingham, Washington. We are very excited to work with them, as they always have amazing coffees from Guatemala. When Onyx sent us samples to our roastery, this Finca Alejandrina jumped off the table! We noted that it had such vibrance of flavors, both tropical and sweet. The overall balance of the cup was incredible. We immediately contacted Ty, our friend at Onyx, and said we need this coffee in our rotation. We purchased the coffee over a month ago and have had to wait to release it, but we didnt want to lose out on a chance at this coffee.
Finca Alejandrina is located in Huehuetenango, Guatemala; specifically in San Martin Cuchumatan. The farm sits at just under 1900 meters above sea level making it nice and dense and full of flavor. Also grown on the farm are plums, oranges, pears, and avocados, but it is 95% coffee plants. The soil is rich in nutrients which allow for healthy growth in the coffee trees, as well as these fruits. These terroir factors along with the care and dedication to excellence from Herman Tello Alverado, the farm owner since 1997, creates amazing products. Just like this one we call "Finca Alejandrina".
In the cup, we've tasted lots of great flavors. It was a hard decision to narrow it down to just three tasting notes. Overall, this cup is pretty tropical, with a nice balance of chocolate or nougat. We've tasted plum, pineapple, peach, apricot, dragonfruit. Along with bakers chocolate, milk chocolate, nougat, molasses, graham cracker. Most common flavors are the ones we listed on the bag; pinapple, peach, and chocolate. But any time this coffee is brewed, you can expect it to be tropical and balanced with good chocolate.
